COMMIS II - BUTCHERY

• Co-ordinates and participates in the proper clearing, cutting, boning and trimming of all butchery items
• Ensures the proper handling, cleanliness and maintenance of the Butcher laboratory, cold room, all material and equipment
• All working areas are cleaned from blood and fat
• Checks all transfers regarding meat and fish/seafood preparation and maintains a strict portion control
• Weigh all incoming and outgoing food items and checks on quality, correctness and quantity, size and weight
• Supervises and directs the proper storage and disposal of all meats
• Assists cost control in inventory taking and meat testing
